GLUTEN-FREE PALEO PANCAKES
INGREDIENTS:
DRY
1/2 C almond flour
1/3 c tapioca flour
1/4 c coconut flour
1/2 tsp baking soda
1/4 tsp salt
WET
4 large eggs
1/4 cup almond milk
1 tbsp honey
1 tsp white wine vinegar
1 tsp vanilla extract
coconut oil

Serving 2 pancackes
Instructions:
Whisk all dry ingredients together
In a separate bowl, whisk all wet ingredients. Then add wet to dry ingredients.
Heat skillet on medium-high and coat with coconut oil
Spoon batter onto skillet making pancakes 3-4 inches in diameter
Cook 2-3 minutes on one side then flip
Serve immediately with fruit or other toppings
