GLUTEN-FREE PALEO PANCAKES

 
 

INGREDIENTS:

DRY

  • 1/2 C almond flour

  • 1/3 c tapioca flour

  • 1/4 c coconut flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

WET

  • 4 large eggs

  • 1/4 cup almond milk

  • 1 tbsp honey

  • 1 tsp white wine vinegar

  • 1 tsp vanilla extract

  • coconut oil

  • Carbohydrates 20.3g

  • Protein 10.3g

  • Fat 13.5g

  • Sugar 6.2

Serving 2 pancackes

Instructions:

  1. Whisk all dry ingredients together

  2. In a separate bowl, whisk all wet ingredients. Then add wet to dry ingredients.

  3. Heat skillet on medium-high and coat with coconut oil

  4. Spoon batter onto skillet making pancakes 3-4 inches in diameter

  5. Cook 2-3 minutes on one side then flip

  6. Serve immediately with fruit or other toppings
